Variety: 90% Chardonnay, 10% Pinot Noir
Winemaking: Indigenous yeast. Undergoes malolactic conversion with one-quarter of the wine aged in old, neutral 600L casks, and the remainder aged in stainless steel tanks. It is aged on the less for 24-36 months and bottled with a dosage of 7 grams/liter and 50 mg/l of SO2.
