Winemaking: A saignée off of a short carbonic maceration of whole clusters. Fermentation is spontaneous in steel tank without sulfur. The wine goes through malolactic fermentation and is aged briefly in steel tank. It is bottled without filtration and with a tiny dose of sulfur.
