Winemaking: Natural vinification using native yeasts without fining or filtration, minimal sulfites added. Grapes were foot crushed and put whole cluster into one ton bins to ferment with once daily punchdowns. After fourteen days the grapes were pressed and settled juice was moved to used French oak barrels to complete fermentation.
