Winemaking: After destemming and soft pressing, the must begins fermentation spontaneously in the presence of the skins. Throughout the fermentation the wine remains in contact with the skins, for a period of approximately 15 days. The separation of the free-run wine from the skins follows. After some cleaning decanting, the wine remains in concrete tanks for 5 months, until bottling. All phases of winemaking take place in concrete tanks.
