Farming: 2 vineyards are harvested at the same time, destemmed and spontaneously co-fermented for 1 week. Macerated seperately and then the two lots are blended before going to barrel for 24 months in used French barrique.
Winemaking: 7 days daily maceration (concrete, stainless steel, wood). Aged 24 months in 225-liter oak barrels (French oak) and an additional 6 months in bottles.
