Matchbook Distilling Late Embers Sunchoke Spirit

A unique spriit made from sunchokes, a common tuber surprisingly similar in composition to agave. The sunchokes are roasted in a pit, fermented with a tiny bit of honey and champagne yeast, then distilled- a similar process to mezcal production.
