Farming: Biodynamic, Hand harvested
Winemaking: Bunches are destemmed, leaving the whole berries intact, but with up to 30% left in whole clusters. The whole berries and clusters are layered in concrete tanks and fermented spontaneously with natural yeasts and no sulfur. The maceration is a short 3-4 days and there are no extractive techniques like punchdowns. The wine is aged in concrete for a scant year and bottled with a small amount of sulfur and without fining or filtering.
