Winemaking: The grapes macerate for 30 days and ferment off their indigenous yeasts. The wine ages 32 months in large 25HL Slavonian oak barrels, then an additional four months in bottle before release. Minimal sulphur is added before fermentation and at bottling. Occasionally the wine needs an extra addition after racking.
