Winemaking: Whole cluster pressed with a long, gentle press cycle. After initial racking, the juice was fermented at low temps. (54 - 60 F) in temperature controlled stainless steel tanks to preserve all the delicate and nuanced aromas. After racking, the Riesling was aged on lighter lees over winter prior to blending and filtration.
