Winemaking: Grapes are de-stemmed and gently crushed. Wild fermented for 1-3 weeks in old oak barrels with punch-downs (no pump-overs) and no unnatural temperature control. At dryness, the free-run is separated and the skins are pressed. Aged 5 months in 10-year-old Rauli barrels. Unfined, unfiltered, with minimal sulphites added.
