Winemaking: Blend of one barrel of Sweetheart, fermented and aged for one year on red wine lees, with one barrel of our Piquette. It was refermented in the bottle to add bubbles. Cider was pressed directly into a barrel containing Merlot lees. After 1 year in barrel, was blended with a barrel of Merlot Piquette. Bottled with organic wildflower honey to referment in bottles. No sulfur added.
