Winemaking: A sous voile (oxidized via flor aging) Chardonnay that experienced élevage completely outdoors in an open air barn (on the same property where the wine was grown) for 10+ years. The barrels were completely forgotten, never opened and never topped, thus wine reduced down to 16.5% percent ABV over the course of a decade, while the chemistry remained the same in regards to total acidity and pH. Direct press into older, neutral, French oak. Never topped. Racked from barrel via argon gas 10+ years later.
