Winemaking: Minimal intervention. A small amount of whole cluster and a lot of juice from destemming the white grapes, and a roaring native fermentation. It went through different phases of juicy fruit/bubblicious/confectionary and when the white grape tannins started to get a bit rugged, we pressed the wine off-dry and finished it as juice in tank. After primary, we barreled down to neutral puncheons for natural malolactic and it was bottled unfined and unfiltered with only 10 parts of SO2 added through its whole life.
