Winemaking: The first clarification process (débourbage) is followed by a second chilling of the must, which separates the courser lees. Each parcel, terroir and varietal is then fermented separately at low temperatures in stainless steel tanks to preserve freshness before blending with 50%-60% reserve wines. Malolactic fermentation. Aged on the lees for 30 months. Dosage 8g/l.
