Parick Piuze “Terroir de Chablis” 2023

Fermentations are spontaneous and go at their own pace. The wine is fermented and aged mostly in old stainless steel tanks that are not temperature controlled and the wine goes through a gentle clay filtration at the end. This "village" level Chablis is really anything but. Piuze focuses obsessively over these wines, crafting no less than 8 distinct village-level sites he insists are as important as his Premier and Grand Cru cuvees. An excellent way to taste quality Burgundy at a fraction of the cost.
