Winemaking: Re-fermented grape pomace (piquette) from direct-pressed white wines for 3-7 days, then blended with 30% finished wine (Riesling and Verdejo). The wine is then infused with Japanese and California yuzu peel from YUZUCO. The base wine was fermented with native yeast and bacteria and a light bottle re-fermentation was initiated with a Champagne yeast starter.
