A rare and seriously compelling Champagne built around three nearly forgotten local varieties. Bright citrus, green apple, white flowers, almond, fresh herbs, and chalky minerality come together with a wonderfully savory, almost vinous texture. Precise and energetic but with plenty of depth, finishing long and saline. A bottle for the Champagne nerds — and a pretty good way to become one.
