Winemaking: Direct press and cold racking of the gross lees for 18 to 24 hours. Fermented in stainless steel tanks and concrete vats. After malolactic fermentation, a racking is performed and 1 gram of SO2 is added per hectoliter. Aging occurs in stainless and fiberglass on the lees with a light earth filtration and 1 to 1.5 grams of SO2 per hectoliter added at bottling.
