Winemaking: Spontaneous fermentation in wood foudres and concrete eggs. Whole-cluster direct pressing for 24 hours, then spends 6 months on lees. 50% press wine, 50% free-run juice. Unfined, unfiltered, with minimal sulfur added.

Serious, next-level rose meant to be enjoyed with special home-cooked meals. The fruit is hand harvested from old vines, vinified thoughtfully, then aged in small oak casks and released when ready to drink.
