Winemaking: Fermented with 50% whole cluster with native yeast and bacteria in standing 228L old french oak barrels. The Pinot was fermented with 100% whole cluster & native yeast and bacteria. The wines were pressed together at dryness in our wooden basket press & then aged in old french oak barrels for 7 months. This wine was racked for the first time to bottle, without filtration or fining, with minimal sulfur used.
