Winemaking: After the manual harvest, the sorting takes place on the property and then in the cellar. The grapes are chilled overnight and then placed in a vat by gravity. It macerates for 5 days and then gravity destroys it. The juices are pressed and flowed in old barrels that are more than 10 years old. Aged in concrete. Unfined, unfiltered, with minimal sulphites added.
