Farming/Winemaking: Organic viticulture with minimal intervention; grapes are hand-harvested, each variety vinified separately (with some skin contact/maceration and mixed aging in neutral barrels and stainless steel), blended before bottling with a tiny amount of sulfur (<20 mg total).
