Farming: Organic; old-vine Silvaner planted on limestone soils
Winemaking: Hand-harvested in two passes, with the first early pick pressed directly for freshness and acidity and the second pick destemmed, crushed, and macerated on the skins for about a week. The two lots are blended and bottled with around 9 g/L residual sugar to finish fermentation naturally in the bottle, then gently hand-disgorged the following spring.

Bright, earthy, and beautifully zippy, with lemon, green apple, grapefruit, fresh herbs, pear, and a cool limestone minerality. The skin contact gives it a little extra texture and savory complexity, while the fine natural bubbles keep everything light and refreshing. A truly delicious little German pét-nat!
