Farming: Organic farming with biodynamic principles; vines are grown without synthetic chemicals, on clay and moraine-stone soils.
Winemaking: Direct-pressed and spontaneously fermented with native yeasts in stainless steel. Bottled unfined and unfiltered with the addition of same-vintage lees for a second fermentation in bottle; never disgorged and no sulfur added. Considered a vino frizzante col fondo made by bottle refermentation—very much in the méthode ancestrale style.

The OG-ish natural Prosecco, and still a total charmer. Cloudy, crisp and lightly fizzy, with citrus, green apple, wildflowers and a little almondy minerality. Chill it, pop it, share it with friends—and don’t worry about fancy glassware or anything like that!
