Winemaking: Hand-harvested; spontaneous fermentation with indigenous yeasts. The wine is aged in a combination of concrete tanks and old oak barrels (demi-muids) to preserve fruit purity. It is bottled unfined and unfiltered with minimal to zero sulfur added.
