Farming: Organic farming; hand-harvested from approximately 20-year-old vines on clay-limestone soils, with mechanical and manual work in the terraces and no herbicides.
Winemaking: Grapes are fully destemmed, then gently pressed with a short cold skin maceration. Fermented under temperature control in stainless steel or concrete and aged for about 8 months in concrete tanks.
The iconic rosé that made us all take rosé seriously. Pale, polished and wonderfully savory, with juicy peach, grapefruit, wild strawberry and a little Provençal spice. Fresh and silky with just enough structure to make it a real wine—and yes, it’s absolutely worth drinking with dinner or saving for a bit of sunshine on the coldest, grayest winter day.
