Flavien Nowak 'Les Bauchets' Blanc de Pinot Noir' Extra Brut Champagne 2019

Flavien Nowack’s family has been making traditional, blended champagnes in the Marne Valley for generations in the village of Vandières. Having studied with younger generation grower-producers like Emmanuel Brochet, Flavien is gradually moving the family estate, parcel by parcel, in a new grower-oriented direction – focusing on organic farming, minimal intervention in the cellar and single parcel, single vintage bottlings. Flavien Champagnes are lower in pressure than is typical, delivering a vinous quality of these exceptionally soft and delicate wines. All fruit is from harvest 2019; Vinification is with fully spontaneous/natural yeasts; the base wine is unfined and unfiltered. Aging is done in small oak barrels.
