Winemaking: A blend of 90% Pinot Noir from Chervey and 10% Pinot Noir from Neuville-sur-Seine, including red wine for the rosé component. The 2011 base was fermented in new 400L oak and aged 9 months on the lees, then given more than five years of bottle aging. Zero dosage; unfined and unfiltered.

Deeply savory and wonderfully evolved, with dried red berries, blood orange, baked apple, citrus peel, toasted nuts, honey, and warm spice. The long aging gives it a gorgeous vinous texture, while bright acidity keeps everything fresh and focused. Complex, dry, and quietly luxurious — a Champagne rosé that begs to be treated like a serious wine.
