Farming: Hand-harvested from vineyards on Triassic clay and Bajocian limestone, with east and southwest-facing exposures.
Winemaking: Whole-cluster pressed, then fermented in temperature-controlled stainless steel. Secondary fermentation takes place in bottle, followed by 24 months aging on the lees. Brut Nature — no dosage.
Jura bubbles with a little extra swagger. This 50/50 Chardonnay and Pinot Noir is bright, creamy and bone-dry, with crisp apple, citrus, biscuit and a subtle saline finish. Tiny bubbles, big personality.
