Winemaking: Hand-harvested, gently pressed after a short low-temperature skin maceration, then fermented and aged on the lees in concrete for 6 months, followed by at least 6 months in bottle.

Bright, savory, and beautifully aromatic, with ripe pear, green apple, lemon, white flowers, and a subtle herbal-mineral edge. There’s plenty of freshness and acidity, but also a lovely roundness from the time spent on its lees in concrete.
