Albanian juniper forms the backbone, joined by kasu shochu made from Brooklyn Kura sake lees, plus rose, dried apricot, orris root, lemongrass, and lemon balm grown on the North Fork. Bottled at 40% ABV.

A wonderfully aromatic gin that starts with classic juniper and then takes a decidedly unexpected turn. Bright lemon balm and lemongrass mingle with rose and apricot, while the kasu shochu brings an intriguing soft, nutty quality — think almond, tropical fruit, and a little sake-like savoriness. Juicy, floral, and beautifully balanced, this is equally at home in a Martini or a G&T, but it’s interesting enough to sip on its own.
