Farming: Organic; high-altitude vineyards around 1,600–1,700 meters, including 150-year-old indigenous Merwah vines. Limestone soils.
Winemaking: Skin-contact white made with native fermentation. Sauvignon Blanc is partially destemmed and fermented on its skins for three weeks, followed by two additional weeks of maceration; Merwah ferments on its skins for three weeks before being pressed and blended. Natural malolactic fermentation; bottled unfined and unfiltered with minimal sulfur.
