Farming: Organic and biodynamic; Trebbiano from organically farmed vineyards on sandy, rocky clay-limestone soils.
Winemaking: Hand-harvested and destemmed, with 2–3 days of skin maceration. Spontaneously fermented with native yeasts in concrete without temperature control, then aged for 6 months in cement. Unfined and unfiltered, with a small addition of sulfur at bottling.
Tuscan Trebbiano with a little skin-contact. Golden, juicy and gently textured, with apricot, chamomile, citrus peel and a whisper of hazelnut. Fresh and savory with just enough grip to make you reach for another glass.
