The Project Fuso CALX Primitivo Puglia 2023 is a joint effort from the FUSO project and certified organic producer Filippo Cassano, the owner of Cantine Polvanera. The name Calx (Latin for limestone) highlights the unique soil of the Altopiano delle Murge in Puglia, the heel of Italy's boot, where the grapes are grown. This limestone-rich terroir lends a refreshing and vibrant character to the Primitivo grape, resulting in a lighter, fresher expression compared to the typical brooding style of the region. The wine is made using native yeasts and is aged in stainless steel, with minimal intervention and low added sulfur, making it a juicy, food-friendly red that is even delightful with a slight chill.
