Raúl Moreno’s La Quimera Pinot Noir 2022 is a remarkable expression of Pinot Noir from the albariza-rich soils of Jerez de la Frontera in Andalusia. Harvested manually in multiple passes, the grapes undergo micro-vinification with 100% whole bunches, followed by a two-week post-fermentation maceration. The wine is aged in second- and third-use French oak barrels from Taransaud and François Frères cooperages, with minimal intervention—no added sulfur during aging, no corrections, and no filtering. The result is a Pinot Noir that balances elegance and structure, offering a unique Burgundian character infused with the distinctive terroir of southern Spain
