Made by a community of Cistercian nuns at a centuries-old monastery just north of Rome, with guidance from the legendary Giampiero Bea. This soulful white is fragrant and beautifully textured, with notes of chamomile, ripe pear, wild herbs, and citrus peel. A little savory, a little mysterious, and utterly lovely alongside pecorino, roasted vegetables, or a long, leisurely lunch.
