Farming: Organic; old vines averaging around 35 years, planted in clay-limestone and Kimmeridgian soils
Winemaking: The 2019 harvest was fermented spontaneously with indigenous yeasts, split between stainless steel and Burgundy barrels, then aged on the lees before extended bottle aging. Disgorged in 2024 with zero dosage.

Deep, vinous, and beautifully complex, with red apple, ripe cherry, dried cranberry, nectarine, toasted nuts, and a subtle savory spice. There’s a lovely chalky, mineral quality underneath it all, with bright acidity and a long, gently oxidative finish. This is Blanc de Noirs with real depth and texture — less about bubbles and more about the whole wine.
